Is there a way when making a dashboard to change how it’s displayed from being a time series to a gauge like the system overview? i have searched but not found other posts about it.

Are you talking about making such within a custom dashboard on app.netdata.cloud? If so i don’t believe we have custom chart types like this yet in custom dashboards but I think it would be a good feature request since we do actually have gauges already in the app.
If working with the agent directly then i believe this is possible via custom dashboards: Custom dashboards | Learn Netdata

If you have used Grafana at all and have one available then one other work-around or solution for now could be a custom dashboard on Grafana.
We just launched the Netdata Grafana plugin recently so with that you get all the flexibility of Grafana in term of visualizations while still the ease of the netdata for collection etc.
Just mentioning in case of interest.
But 100% we need much more flexible and custom dashboards built into app.netdata.cloud. Hopefully your feature request will be one little step in the right direction 
I have not used it in my own projects but use it exclusively at work so I’ll look into it. Thank you.
